6 slices Jones Dairy Farm Dry Aged Bacon
1/2 cup onion, diced
1 1/2 cups all purpose flour
3 teaspoons baking powder
1/2 teaspoon salt
1/2 teaspoon black pepper
1/2 cup butter, melted
2 eggs, lightly beaten
2/3 cup milk
1 1/2 cups pepper jack cheese, grated
Preheat oven to 350°F. Spray 16 muffin cups with nonstick cooking spray.
In medium skillet, fry bacon until crisp. Remove bacon and dice or crumble; set aside. Add onion to bacon fat and cook until translucent; set aside.
In a large bowl, combine flour, baking powder, salt and pepper. Make a well in center and add melted butter, eggs and milk. Lightly mix, until just combined.
Fold in grated cheese, bacon and onions. Fill each muffin cup about 2/3 full.
Bake until toothpick inserted in center comes out clean, 12-15 minutes.
