A bacon lattice tops these individual breakfast pies that are packed with eggs, feta cheese, kale and even more dry aged Jones bacon.


 Enjoy these main ingredient substitutions:

Dry Aged Cherrywood Smoked Bacon Slices

ingredients
2 store bought pie crusts, uncooked and divided
6 large eggs
1/3 cup half and half
Kosher salt and pepper, to taste
6 tablespoons small diced kale
6 tablespoons Jones Dairy Farm Dry Aged Bacon, cooked crisp and diced
12 teaspoons feta cheese
8 slices Jones Dairy Farm Dry Aged Bacon, cut in half horizontally then in thirds vertically
DIRECTIONS
Preheat oven to 400˚F.

Line 6 mini tart pans with pie crust and bake for about 12 minutes until golden, set aside.

In medium bowl whisk together eggs, half and half, salt and pepper, set aside.

Place prebaked pies onto baking dish. Add 1 tablespoon kale, 1 tablespoon crispy cooked bacon and 2 teaspoons feta to each pie. Pour in egg mixture. Weave thin bacon slices over top of pies.

Bake for about 15 minutes until egg is set, bacon is cooked and top is browned.
