ingredients
1 1/2 cups Jones Dairy Farm All Natural Golden Brown Sausage
2 tablespoons butter
2 tablespoons onion, chopped
2 tablespoons red or green pepper, chopped
2 tablespoons celery, chopped
4 eggs, slightly beaten
1/4 teaspoon salt
1/4 cup plain yogurt
2 pita breads, cut in half
1 tomato, chopped
Moterey Jack cheese, shredded
DIRECTIONS
Prepare sausage as directed on package, slice thinly, and set aside.

In 10" x 16" baking dish, combine butter, onion, pepper, celery and sausage. Microwave uncovered at full power for 2-3 minutes (until vegetables are tender).

Stir in eggs and salt. Cover with vented plastic wrap and microwave on medium for 3.5 to 4 minutes (until eggs are almost set), stirring twice.

Stir yogurt into egg mixture and microwave at medium for 1 minute.

Spoon egg mixture unto pita bread; top with tomato and Monterey Jack cheese.
