1 (6 oz) package Jones Dairy Farm Canadian Bacon
4 large eggs
1 1/2 cups half and half or whipping cream
1 cup blanched fresh cut asparagus, cut to 3/4 inch pieces
1/2 cup roasted red peppers, well-drained, diced
1/2 cup shredded smoked Gouda cheese
2 tablespoons chives or green onion tops, chopped
1/2 teaspoon salt (optional)
1/4 teaspoon freshly ground black pepper
Preheat oven 375° F.
Heat a 12" nonstick skillet or griddle over medium-high heat. Add Canadian Bacon; cook until golden brown, 2 to 3 minutes per side. (This increases flavor and seals in the juices). Transfer to a carving board and let cool.
Meanwhile, beat eggs in a large bowl; gradually beat in half and half. Stir in asparagus, red peppers, cheese, chives, salt and pepper and mix well.
Stack Canadian Bacon and cut into 1/2-inch chunks. Stir into egg mixture. Pour mixture into a buttered or sprayed 9" pie plate or quiche dish.
Bake 35 to 40 minutes or until center is set (knife inserted in center comes out clean). Let stand 10 minutes before serving.
