Make these Southwest-inspired, individual frittatas the next time you have guests for breakfast. Packed with Jones breakfast sausage, tomatoes and cheese.


 Enjoy these main ingredient substitutions:

1 (12 oz) Jones Dairy Farm All Natural Pork Sausage Roll
1 (10 oz) can diced tomatoes with green chilies, drained
8 eggs, lightly beaten
3/4 cup all purpose flour
2 teaspoons baking powder
1/2 tsp salt
1 small clove garlic, minced
2 cup frozen corn kernels, thawed and drained
1 1/2 cups cottage cheese
1 1/2 cups sour cream
3 cups shredded cheddar or monterey jack cheese
DIRECTIONS
Preheat oven to 350˚F.

In a skillet, lightly brown sausage; stirring frequently to crumble. Drain well; add tomatoes, set aside.

In a mixing bowl, combine eggs, flour, baking powder, salt, garlic, corn, sour cream, and cottage cheese; stir until blended.

Fold in cheddar cheese and sausage mixture, then divide equally into 8 greased, 6 ounce individual casseroles.

Bake for 45 to 50 minutes or until knife inserted in center comes out clean.
