2 extra large potatoes
1 (10 oz) package baby spinach, chopped
1/2 red bell pepper, diced
1 green onion
4 to 6 slices Jones Canadian Bacon
1/3 cup crumbled feta cheese
1 1/2 tablespoon milk
Scrub potatoes and poke skin with fork. Rub with small amount of olive oil and salt.
Place on baking sheet and bake at 350°F until knife can be easily inserted, about an hour. Slice potatoes in half the long way. Using a spoon, scoop out inside and reserve for another use.
In large skillet sprayed with nonstick spray heat spinach, turning until wilted. Place wilted spinach in mixing bowl and set aside. Spray skillet again, add peppers and sauté until just tender. Add peppers to mixing bowl with spinach.
Chop green onion and dice Canadian Bacon; add to bowl with veggies. Gently toss with feta cheese. Divide mixture evenly between hollowed out potato shells.
Place potatoes in baking dish coated with nonstick spray.
Beat eggs and milk. Fill potatoes with egg mixture and bake at 350°F until egg is set and cooked throughout, about 20 minutes.
