This recipe is made with Jones Canadian Bacon.


Pancakes take the place of bread in this reimagined take on a classic sandwich. Savory Jones Canadian Bacon helps balance the sweetness of the pancakes.

Ham Slices

​For the Pancakes:

6 oz cream cheese
6 eggs
3 packets stevia (or any) sweetener
1 1/2 teaspoons cinnamon

For the Casserole:

2 (6 oz) packages Jones Dairy Farm Canadian Bacon
1 1/2 cups Gruyere or Swiss cheese, shredded
1/3 cup Sugar Free Pancake Syrup, warmed
DIRECTIONS

For the Pancakes:

Put all ingredients in a blender or magic bullet. Blend until smooth. Let rest for 2 minutes so the bubbles can settle. Pour batter in small batches into a hot pan greased with butter or pam spray. Cook for 2 minutes until golden, flip and cook 1 minute on the other side. Repeat with the rest of the batter. Makes 12 pancakes.

For the Casserole:

Grease a 9x9 baking dish and place a layer of 4 cream cheese pancakes on the bottom and halfway up the sides. Add a layer of Canadian Bacon, then sprinkle with 1/2 cup of cheese. Repeat 2 more times until you have three layers—the top layer being the cheese.

Bake at 375​ degrees for 15 minutes, or until heated through. Remove from the oven and pour the warm syrup evenly over the top. Cut into 6 squares and serve.

Optional ​- top with a runny poached or fried egg and additional sugar free syrup.
