Traditionally served later in the day, kebabs make a great summer breakfast option when made with Jones breakfast sausage, peppers and new potatoes.


ingredients
1/2 sweet red bell pepper, seeded and cut into 1-inch square pieces
1/2 sweet yellow bell pepper, seeded and cut into 1-inch square pieces
1/2 green bell pepper, seeded and cut into 1-inch square pieces
1 sweet yellow onion, cut into chunks
8 new potatoes, washed, quartered & patted dry
Olive Oil
Salt and pepper, to taste
1 (12 oz) package Jones Dairy Farm All Natural Sausage Links
6 tablespoons water
8 bamboo skewers
Honey mustard, store bought or homemade
DIRECTIONS
Preheat oven to 400˚F.

On three separate baking sheets, place bell peppers, onion and potatoes. Drizzle all vegetables with olive oil and season with salt and pepper.

Place potatoes in oven for 30 minutes. After 10 minutes, place peppers in oven to cook for 20 minutes. After 5 more minutes, place onions in oven to bake 15 minutes. (All vegetables should be ready at the same time).

While vegetables are roasting, place sausages in large skillet with water. Cover and cook on medium heat for 15 minutes. Remove lid and continue cooking sausages to brown them, 2-3 minutes per side. Remove from heat and cut each link into four pieces. To make kebabs, slide peppers, onion, potatoes and sausage on bamboo skewers and serve immediately with favorite honey mustard.

If grill marks are desired, preheat grill or griddle and place kebabs on grill just long enough to get grill marks.
