2 1/4 cups flour
1 teaspoon baking soda
1 teaspoon salt
1 cup (2 sticks) unsalted butter, softened
3/4 cup dark brown sugar
3/4 cup granulated sugar
1 teaspoon vanilla extract
2 large eggs
2 cups chocolate chunks
1 (8 oz) package Jones Dairy Farm Dry Aged Bacon, cooked and chopped
Preheat the oven to 375°F. Line baking sheet with parchment paper.
In large bowl, sift together flour, baking soda and salt. Set aside.
In bowl of stand mixer fitted with paddle attachment, cream together butter, brown sugar, granulated sugar and vanilla extract until light and fluffy. Add eggs one at a time, running mixer on medium-low.
Reduce speed to low and add flour mixture a little at a time to stand mixer, until just incorporated. Stir in chocolate chunks and chopped bacon.
Using medium cookie scoop, droop dough in balls onto prepared cookie sheet. Bake 8-10 minutes, until golden and cooked through. Remove from oven and let sit for 2 minutes before transferring to wire rack to cool.
