Italian ravioli is reimagined as a hearty stew with red and green peppers, garlic, parmesan cheese and Jones Dairy Farm breakfast sausage links.


ingredients
1 teaspoon olive oil
1 red bell pepper, cut into chunks
1 green bell pepper, cut into chunks
3 cloves garlic, minced
1 (14 oz) can reduced sodium chicken broth
1 (9 oz) package cheese filled ravioli
1 (14.5 oz) can Italian seasoned or pasta-style diced tomatoes, undrained
6 Jones Dairy Farm All Natural Golden Brown Sausage Patties, coarsely chopped
1/4 cup grated Parmesan cheese
1/4 cup chopped fresh basil or parsley
Crushed red pepper flakes (optional)
DIRECTIONS
Heat oil in a large, deep skillet over medium-high heat.

Add bell peppers and garlic; cook and stir 2 minutes.

Add broth; bring to a simmer.

Add ravioli; cover and simmer 5 minutes.

Stir in tomatoes and sausage; simmer uncovered 5 minutes or until ravioli and vegetables are tender.

Ladle into 4 shallow bowls; top with cheese and basil. Sprinkle with red pepper flakes, to taste, if desired.
