Love tacos but sick of standard fillings? Savory breakfast sausage is an unexpected, bold substitute that pairs perfectly with peaches and chipotle crema.


 Enjoy these main ingredient substitutions:

ingredients

For the Tacos:

1 (12 oz) Jones Dairy Farm All Natural Pork Sausage Roll
1 tablespoon ground cumin
1 tablespoon ground coriander
1 teaspoon garlic powder
1 teaspoon chili powder
3 tablespoons prepared tomato salsa
2 tablespoons green onions, chopped
6 (6 inch) corn or flour tortillas

For the Peach Salsa:

2 cups fresh peaches, chopped
3 tablespoons red onion, chopped
1/4 cup fresh cilantro, chopped
1 tablespoon fresh lime juice
1 tablespoon honey
Salt and pepper to taste

For the Chipotle Crema:

1/4 cup sour cream
1 tablespoon milk
1 teaspoon chipotle powder
DIRECTIONS
In a medium sauté pan, cook sausage for about 8 minutes, breaking up with a spatula into small pieces. Drain.

Add cumin, coriander, garlic powder, chili powder, tomato salsa and green onions. Cook for another 2 minutes. Set aside.

For the Peach Salsa:

Combine all of the salsa ingredients in a small bowl and set aside.
     

For the ​Chipotle ​Crema:

Whisk together the sour cream, milk and chipotle powder until smooth.


To ​Build the ​Tacos:

Top a warmed tortilla with a few tablespoons of the sausage mixture. Spoon on the peach salsa and a generous drizzle of crema. Serve immediately.
