4 cups mashed potatoes
1/2 cup onions, caramelized
2 cups cheddar cheese, shredded
DIRECTIONS
Preheat oven to 375˚F.

Fill shallow dish with hot tap water and add noodles. This helps soften noodles.

Set skillet over medium heat and add sausage. Break into small pieces and cook until no longer pink. Drain sausage onto paper towel lined plate and set aside.

In large bowl add mashed potatoes, sausage, onions and 1 1/2 cups shredded cheese.Stir together until combined.

In 8x8-inch casserole dish add a little bit of mashed potato mixture to bottom of dish. This will prevent noodles from sticking.

Lay 2 noodles on top and top with 1/3 mashed potato mixture. Repeat layers 2 more times and finish of top with remaining 1/2 cup cheese.

Cover with foil and bake for 30 minutes. Remove foil and bake for additional 10-15 minutes until cheese is just browned on top.
