Any soup can warm you up. But only a rich, satisfying, carrot ginger soup topped with crispy slices of Jones Cherrywood Smoked Bacon can warm your soul.

Dry Aged Cherrywood Smoked Bacon Slices

ingredients
5 cups carrots, peeled and chopped
5 cups chicken stock
1 cup chopped onion
1 1/2 cups chopped leeks
1 tablespoon fresh ginger, chopped fine
1 tablespoon olive oil
1 sprig of fresh thyme
1/2 teaspoon salt
Pepper to taste

For garnish:

Jones Dairy Farm Dry Aged Bacon, cooked according to package directions
Reduced heavy cream
Flat leaf parsley
DIRECTIONS
Place first nine ingredients in slow cooker. Cook on high for 3 hours.

Carefully puree in blender (in batches if needed) until a creamy consistency is reached. Garnish with lots of Jones bacon, a drizzle of cream and a leaf of parsley.
