2 1/2 cups brown rice
2 tablespoon olive oil
1 (10 oz) Jones Dairy Farm Ham Steak Twin Pack
1 small onion
2 celery stalks
2 carrots
1 cup red bell pepper
1 cup green bell pepper
5 ounces Jones Dairy Farm Golden Brown Chicken Sausage Links
1 tablespoon fresh thyme
2 teaspoon fresh oregano
2 teaspoon salt
1 teaspoon black pepper
1 tomato, diced
1 (14.5 oz) can diced tomatoes
1 (15 oz) can tomato sauce
1 3/4 cups chicken stock
1 tablespoon Worcestershire sauce
1 tablespoon chipotle hot sauce
12 ounces large shrimp, cooked, peeled and deveined
DIRECTIONS
Toss brown rice with olive oil and add to slow cooker. Chop ham, onion, celery, carrots and both bell peppers and add to slow cooker. Cut sausage into 1/2-inch thick slices and place in slow cooker. Add herbs, tomatoes, tomato sauce, chicken stock, Worcestershire and hot sauce. Stir until just combined.

Cook on high for 3 hours.

Before serving, gently stir in shrimp. Let warm in slow cooker for 5-10 minutes and serve.
