1 pound ground beef
1 (12 oz) Jones Dairy Farm All Natural Pork Sausage Roll
1/4 cup red bell peppers, chopped
1/4 cup poblano peppers, chopped
1 stalk celery, chopped
2/3 cup onion, chopped
1 tablespoon fresh parsley
2 teaspoons fresh thyme
1 1/2 teaspoons salt
1 teaspoon pepper
1 tablespoon Worcestershire sauce
1 tablespoon Dijon mustard
1/2 cup cornmeal
Ketchup or sauce for meatloaf, to taste
1 pound carrots, peeled and chopped into large pieces
1 pound baby Yukon gold potatoes
Combined first 13 ingredients (through mustard) in large bowl and mix until well combined. Shape into loaf.
For easy removal of finished meatloaf, form a boat out of aluminum foil. Place meatloaf in boat, forming a slight indent in the top of meatloaf with thumbs. Add ketchup, or favorite sauce, to the indent on top of meatloaf. Center in slow cooker. Add carrots and potatoes on either side.
Cook on high for 3 1/2 hours or until internal temperature of meatloaf reaches 180˚F. Remove from slow cooker, slice and serve with carrots and potatoes.
