1 (8 oz) package Jones Dairy Farm Dry Aged Bacon, chopped
2 carrots, peeled and sliced
2 ribs celery, chopped
1 onion, chopped
2 cloves garlic, minced
1 jalapeño pepper, seeded and diced
2 large sweet potatoes, peeled and cubed
5 cups water
1 bay leaf
1/8 teaspoon cayenne pepper
1/2 teaspoon allspice
1 cup frozen corn
1/2 cup fat free half and half
In large stock pot or Dutch oven, add bacon and cook over medium heat just until it begins to crisp, about 5 minutes. Remove bacon to paper-towel lined plate; set aside. Pour off all but 2 tablespoons rendered fat.
Add carrot, celery, onion, garlic and jalapeño pepper. Cook over medium heat until vegetables begin to soften, another 5-7 minutes. Add sweet potato, water, bay leaf, cayenne pepper, and allspice. Simmer 20 minutes, or until potatoes are soft.
Add corn and half and half; simmer until heated through.
