2 1/2 lbs baking potatoes
2/3 cup flour
4 cups milk
2 cups chicken broth
1 cup cheddar cheese, shredded, plus more for topping
1 teaspoon salt
1/2 teaspoon pepper
1 (8 oz) container reduced fat sour cream
3/4 cup green onions, sliced, divided
1 (6 oz) package Jones Dairy Farm Canadian Bacon, diced
DIRECTIONS
Preheat the oven to 400˚F. Pierce potatoes with fork and bake until tender, about 1 hour. Let cool until cool enough to handle. Peel and lightly mash potatoes.

Add flour to large heavy bottomed pot or dutch oven over medium heat. Gradually add milk and chicken broth, whisking to avoid clumps. Cook until slightly thickened, about 8-10 minutes. Add potatoes, cheese, salt and pepper. Remove from heat.

Stir in sour cream, 1/2 cup of green onions and 3/4 of Canadian Bacon. Serve soup topped with the remaining green onions, Canadian Bacon and cheese.
