Filled with hash browns, eggs, breakfast sausage and cheese, these wholesome breakfast casserole cups take just ten minutes to prep.


ingredients
1 1/2 cups refrigerated hash browns
8 tablespoons shredded cheddar cheese, divided
1 (5-7oz) package Jones Dairy Farm All Natural Golden Brown Sausage Patties
4 tablespoons peppers and onions, diced and cooked
2 large eggs, scrambled and cooked
Chopped chives, for topping
DIRECTIONS
Preheat oven to 350˚F. Spray 4 cups of large muffin tin with non-stick spray or coat with butter.

Press hash browns into muffin cups, creating about 1-inch thick layer of hash browns in bottom of cup.

Bake for about 25 minutes or until hash browns are crispy and browned.

Remove from oven and top each cup with 1 tablespoon shredded cheese, 1 sausage patty, 1 tablespoon cooked peppers, 1/4 of the scrambled egg and 1 more tablespoon cheese.

Add back to oven and bake for another 5 minutes until layers are warmed through and cheese is melted.
