Topped with chicken sausage, beans, cotija cheese and avocado, you can easily adjust this Mexican-inspired recipe to include your favorite toppings.


ingredients
4 Jones Dairy Farm All Natural Golden Brown Chicken Sausage Patties, chopped
1/2 cup refried beans, divided
4 corn tortillas, toasted
4 eggs
3 tablespoons milk
1 scallion, thinly sliced, divided
1/3 cup grape tomatoes, halved
1/2 avocado, thinly sliced
Crumbled cotija cheese, for garnish
Cilantro, for garnish
DIRECTIONS
Place skillet over medium heat. Once hot, add chicken sausage and cook until browned.

Whisk together eggs and milk; add to skillet with sausage along with half scallions and cook until eggs are cooked through. Remove from heat and set aside.

Spread 2 tablespoons refried beans on each toasted tortilla. Top each egg and sausage scramble, grape tomatoes and avocado. Garnish with cotija and cilantro. Serve immediately.
