2 teaspoons canola or vegetable oil
1 red bell pepper, cut into short, thin strips
2 cups snow peas, diagonally halved
3 cloves garlic, minced
3 cups, cooked crown or white rice, chilled
1 (8 oz) package Jones Dairy Farm Ham Slices OR 1 (7 oz) Jones Dairy Farm Ham Steak, cut into 1/2 inch pieces
1/4 cup wheat free organic tamari sauce
2 tablespoons seasoned rice vinegar
1/4 teaspoon crushed red pepper flakes
Optional garnishes: chopped cilantro or green onions, chopped peanuts or cashews
Heat oil in a 12" nonstick skillet or wok over medium-high heat. Add bell pepper and snow peas; stir-fry 3 minutes.
Add garlic; stir-fry 1 minute or until vegetables are tender.
Add rice and ham; stir-fry until heated through, about 2 minutes.
Combine tamari, vinegar and pepper flakes. Add mixture to skillet; stir-fry 2 minutes or until heated through. Garnish as desired.
