Spicy Ginger Ham Satay Skewers
You will need:
10 Jones Country Carved ham slices
1/4 Cup pineapple preserves
1 Tablespoon cider vinegar or white wine vinegar
1 Teaspoon fresh grated or bottled gingerroot
1 jalapeno pepper, roasted, skin and seeds removed
1 red bell pepper, roasted, skin and seeds removed
1 yellow banana pepper, roasted, skin and seeds removed
1 red onion, roasted
Salt to taste
1 Tablespoon olive oil
Directions:
Prepare grill.
Mix together preserves, vinegar and ginger; set aside.
In a food processor, blend peppers, onion and salt to taste until smooth.
Reduce pepper mixture over medium heat until it is the consistency of peanut butter.
Spread a thin layer of the pepper mixture onto each ham slice.
Fold each ham slice lengthwise into thirds and thread accordian style onto skewers.
Brush each side of folded ham lightly with olive oil.
Grill for 30 seconds per side or until ham is hot.
Remove skewers from grill.
Brush lightly with pineapple preserve mixture.
Makes 10 servings.
