Southwest Breakfast Wraps (low fat)

liquid egg substitute4.5 Cup40 ounce
Jones Country Club Canadian Bacon Stick, diced0.75 Cup6 ounce
salsa or picante sauce1 Cup8 ounce
low fat or fat free flour tortillas (6 to 8 inch), warmed12 Each
reduced fat Cheddar cheese, shredded3 Cup12 ounce
cilantro, chopped (optional)6 Tablespoon
Directions:
Spray large saute pan with non stick cooking spray. Heat on medium heat. Combine liquid egg substitute, Canadian bacon, and salsa until well blended. Pour egg mixture into saute pan. Scramble to desired consistency. For each tortilla, place approximately 2/3 cup egg mixture on to 1 warm tortilla. Sprinkle with 1/4 cup cheese and 1-1/2 teaspoon cilantro. Roll up burrito style.

Makes 12 servings.
