Italian Ravioli & Sausage Stew
You will need:
1 Teaspoon olive oil
1 red bell pepper, cut into chunks
1 green bell pepper, cut into chunks
3 cloves garlic, minced
1 (14 ounce) can reduced-sodium chicken broth
1 (9 ounce) package refrigerated cheese filled ravioli
1 (14.5 ounce) can Italian seasoned or pasta-style diced tomatoes, undrained
6 Jones All Natural Golden Brown breakfast sausage patties, coarsely chopped
1/4 Cup grated Parmesan cheese
1/4 Cup chopped fresh basil or parsley
1 Crushed red pepper flakes (optional)
Directions:
Heat oil in a large, deep skillet over medium-high heat.
Add bell peppers and garlic; cook and stir 2 minutes.
Add broth; bring to a simmer.
Add ravioli; cover and simmer 5 minutes.
Stir in tomatoes and sausage; simmer uncovered 5 minutes or until ravioli and vegetables are tender.
Ladle into 4 shallow bowls; top with cheese and basil.
Sprinkle with red pepper flakes, to taste, if desired.
Makes 4 servings.
