Southwest Scramble (low carb)

| large eggs | 24 Each | 48 ounce |
| Jones Precooked Golden Brown Sausage Links, cut into 1/2-inch pieces | 24 Each | 24 ounce |
| salsa or picante sauce | 1 Cup | 8 ounce |
| Cheddar cheese, shredded | 3 Cup | 12 ounce |
| cilantro, chopped (optional) | 6 Tablespoon | |
Directions:
Melt butter in a large saute pan on medium heat.
Combine eggs, sausage, and salsa until well blended.
Pour egg mixture into saute pan. Scramble to desired consistency.
Divide egg mixture equally between 12 serving plates.
Top each with 1/4 cup cheese and 1-1/2 teaspoon cilantro.
Makes 12 servings.
