Southwest Scramble (low fat, low carb)

| liquid egg substitute | 4.5 Cup | 40 ounce |
| Jones Country Club Canadian Bacon Stick, diced | 0.75 Cup | 6 ounce |
| salsa or picante sauce | 1 Cup | 8 ounce |
| reduced fat Cheddar cheese, shredded | 3 Cup | 12 ounce |
| cilantro, chopped (optional) | 6 Tablespoon | |
Directions:
Spray large saute pan with non stick cooking spray.
Heat on medium heat.
Combine liquid egg substitute, Canadian bacon, and salsa until well blended.
Pour egg mixture into saute pan.
Scramble to desired consistency.
Divide egg mixture equally between 12 serving plates.
Top each with 1/4 cup cheese and 1-1/2 teaspoon cilantro.
Makes 12 servings.
