Southwest Scramble (low fat, low carb)

liquid egg substitute4.5 Cup40 ounce
Jones Country Club Canadian Bacon Stick, diced0.75 Cup6 ounce
salsa or picante sauce1 Cup8 ounce
reduced fat Cheddar cheese, shredded3 Cup12 ounce
cilantro, chopped (optional)6 Tablespoon
Directions:
Spray large saute pan with non stick cooking spray. Heat on medium heat. Combine liquid egg substitute, Canadian bacon, and salsa until well blended. Pour egg mixture into saute pan. Scramble to desired consistency. Divide egg mixture equally between 12 serving plates. Top each with 1/4 cup cheese and 1-1/2 teaspoon cilantro.

Makes 12 servings.
