Crispy, crunchy outside, gooey cheesiness inside, these tasty appetizers delight with savory pork sausage in every bite.

ingredients
16 ounces ricotta cheese
1/3 cup Parmesan cheese, grated
1 teaspoon fresh garlic, minced
1 teaspoon Italian seasoning
1/4 teaspoon crushed red pepper flakes, optional
5 large eggs
7 mozzarella cheese sticks, split in half the long way
7 Jones Dairy Farm All Natural Pork Sausage Little Links, pan-fried, split in half the long way
14 dry Manicotti shells, cooked al dente according to package directions
1 cup all purpose flour
​Salt and pepper
1/2 cup Italian seasoned bread crumbs
1 cup panko bread crumbs
Canola oil for frying
1 cup prepared marinara sauce, warmed for dipping
DIRECTIONS
In medium sized bowl, mix ricotta, Parmesan, garlic, Italian seasoning, red pepper flakes if desired, and 2 eggs. Pour mixture into gallon sized zip top bag. Snip 1/2 inch off one corner of bag. 

Place half sausage link and half mozzarella stick inside each pasta tube. Pipe ricotta mixture from zip top bag into center of each tube. Place on sheet pan. 

Setup breading station using 3 pie plates or shallow bowls. Place flour in first dish. Season with salt and pepper. Beat 3 eggs with 1 tablespoon of water in second dish. Mix both types of bread crumbs in third dish. Coat each stuffed noodle in flour. Dip in egg mixture. Press into the breadcrumb mixture. Place on sheet pan. 

Heat 1/2 inch of canola oil in frying pan over medium high heat to 350˚F. Fry manicotti in batches 2-3 minutes on each side until golden brown and cheese is melted. Transfer to sheet pan lined with paper towels. 

Serve with warmed marinara sauce for dipping.
