Filled with eggs, smoked ham, red peppers and cheddar cheese, these mini breakfast tarts are perfect for brunch or a special breakfast.

This recipe is made with Jones Ham Steaks.

7 oz Ham Steak
ingredients
2 store bought pie crusts, uncooked and divided
6 large eggs
1/3 cup half and half
Kosher salt and pepper, to taste
6 tablespoons Jones Dairy Farm Ham, diced small
6 tablespoons red bell pepper, diced
12 teaspoons shredded cheddar cheese
DIRECTIONS
Preheat oven to 400˚F.

Line 6 mini tart pans with pie crust and bake for about 12 minutes until golden, set aside.

In medium bowl whisk together eggs, half and half, salt and pepper, set aside.

Place prebaked pies onto baking dish. Add 1 tablespoon ham, 1 tablespoon red bell peppers, and 2 teaspoons cheddar cheese to each pie dish. Pour in egg mixture.

Bake for about 15 minutes until egg is set and top is browned.
