Ham Slices

ingredients

For the Pancakes:

6 oz cream cheese
6 eggs
3 packets stevia (or any) sweetener
1 1/2 teaspoons cinnamon

For the Casserole:

2 (6 oz) packages Jones Dairy Farm Canadian Bacon
1 1/2 cups Gruyere or Swiss cheese, shredded
1/3 cup Sugar Free Pancake Syrup, warmed
DIRECTIONS

For the Pancakes:

Put all ingredients in a blender or magic bullet. Blend until smooth. Let rest for 2 minutes so the bubbles can settle. Pour batter in small batches into a hot pan greased with butter or pam spray. Cook for 2 minutes until golden, flip and cook 1 minute on the other side. Repeat with the rest of the batter. Makes 12 pancakes.

For the Casserole:

Grease a 9x9 baking dish and place a layer of 4 cream cheese pancakes on the bottom and halfway up the sides. Add a layer of Canadian Bacon, then sprinkle with 1/2 cup of cheese. Repeat 2 more times until you have three layers—the top layer being the cheese.

Bake at 375 degrees for 15 minutes, or until heated through. Remove from the oven and pour the warm syrup evenly over the top. Cut into 6 squares and serve.

Optional - top with a runny poached or fried egg and additional sugar free syrup.
