Savory Jones breakfast sausage makes an unexpected crust in this flavorful breakfast. To make ahead, prepare quiche and refrigerate until ready to bake.

This recipe is made with a Jones All Natural Roll Sausage.

ingredients
1 (12 oz) Jones Dairy Farm All Natural Pork Sausage Roll
1 tablespoon butter
1/2 cup yellow onion, chopped
1 (10 oz) package frozen chopped spinach, thawed and drained
1/4 teaspoon ground nutmeg
Salt and pepper to taste
1/4 cup parmesan or romano cheese, grated
1/2 cup mozzarella cheese, grated
2 eggs
1 1/2 cups half and half
DIRECTIONS
Preheat oven to 350˚F.

Place 15-inch square of parchment paper on work surface. Remove the sausage from package and form into round ball.Flatten and place on parchment paper. Cover the sausage with another 15-inch square sheet. Use a clean rolling pin to roll the sausage into a disk large enough to fit a 9-inch pie plate. Peel sausage from parchment and gently place into the pie plate. Seal any tears in sausage and make sure entire pie plate is covered.

Melt butter in medium sauté pan and add chopped onions. Cook for about 5 minutes or until soft and translucent. Stir spinach into onions and cook mixture for another 3-5 minutes. Add nutmeg and season with salt and pepper to taste. Remove from heat and add parmesan cheese.

Spread spinach mixture over sausage crust. Sprinkle shredded mozzarella over spinach mixture.

In medium-sized bowl, beat eggs together with half and half until fully combined. Gently pour egg mixture over spinach and cheese.

Place pie plate on baking sheet and bake for 30 minutes. Before serving, place under broiler for 2 minutes to brown top. Let pie set for 8-10 minutes before cutting into wedges and serving.
