1 1/2 cup liquid egg substitute
8 slices Jones Dairy Farm Canadian Bacon, diced
1/3 cup salsa or picante sauce
1 cup shredded reduced fat cheddar cheese
2 tablespoons cilantro, chopped (optional)
DIRECTIONS
Mix together egg substitute, Canadian Bacon and salsa.

Pour mixture into medium hot skillet. Cook, stirring frequently, until eggs are desired consistency.

Spoon mixture onto serving plates; top with cheese, and cilantro, if desired.
