This recipe is made with Jones Turkey Bacon.

ingredients
4 portobella mushroom caps
4 slices Swiss Cheese 
8 slices Jones Dairy Farm Turkey Bacon
8 leaves Iceberg lettuce, washed and cut at base to keep leaves intact  
1 medium tomato, thick sliced (optional) 
1 small onion, thinly sliced (optional) 
Favorite condiments – mustard, ketchup, aioli, horseradish
DIRECTIONS
Preheat oven to 450 degrees F. 

Line cookie sheet with foil and spray with non-stick cooking spray. Wipe mushrooms to remove excess dirt. Trim stem. 

Wrap 2 turkey bacon pieces around each mushroom. Tuck ends under stem. Place mushrooms on cookie sheet, cap facing up. Bake 10 to 15 minutes. Add slice of cheese to each mushroom. Bake 1 minute. Remove mushrooms from cookie sheet. Place on paper towel to drain.

To assemble, place mushroom on two or three lettuce leaves. Top with tomato, onion and favorite condiments. Wrap lettuce around mushroom as tightly as possible. Cut in half and enjoy.
