This quick and easy kale recipe uses bacon as a secret ingredient and even fits the Paleo Diet. See how simple it is to make.

ingredients
4 slices of Jones No Sugar Bacon, cut into 1-inch pieces
1 bunch of kale, stems removed and cut into ​1/2 inch strips
​1/2 red onion, diced
2 garlic cloves, sliced
1 teaspoon red pepper flakes
​1/4 cup chicken stock (no salt)
​1/2 cup pecans, chopped
​1/4 cup dried cranberries (no sugar)
1 tablespoon maple syrup
2 tablespoon balsamic vinegar
 
DIRECTIONS
Cook bacon in pan over medium heat until crispy. Remove bacon and reserve 3 tablespoons of bacon drippings. 

Add drippings, onions, garlic and chili flakes to the pan and cook over medium heat for 2 minutes. 

Add kale and chicken stock and cook until tender and liquid is reduced by two-thirds. 

Add pecans, cranberries, maple syrup and vinegar. Cook for 2 to 5 minutes until kale is glazed and most of the liquid is evaporated. 

Top with reserved bacon and serve.
