Pizza Frittata with Canadian Bacon

Loaded with veggies and Canadian Bacon, this low carb breakfast frittata tastes delicious and is paleo and keto friendly too.

This recipe is made with Jones Canadian Bacon.

ingredients
2 6oz packages Jones Dairy Farm Canadian Bacon, diced 
1 red pepper, diced 
1 green pepper, diced
1 orange pepper, diced 
1 large yellow onion, diced
1 8 oz package of white mushrooms, thinly sliced 
1 dozen large eggs 
Salt and pepper
1 jar pizza sauce of choice
Optional: shredded mozzarella cheese
DIRECTIONS
Preheat oven to 425˚F.

Sauté vegetables and Canadian Bacon in separate nonstick skillets. Coat each skillet with cooking spray. Veggies should be slightly softened. Canadian Bacon should be fragrant and browned around edges. When done, transfer to bowls. Set aside.

In large mixing bowl, beat eggs. Season with salt and pepper. Add half sautéed veggies and half Canadian Bacon to egg mixture. Stir to combine. 

Coat ovenproof extra-large nonstick skillet with cooking spray. Pour in mixture. Cook in preheated oven until set, approximately 5 minutes. 

Remove from oven. Top with pizza sauce and cheese, if desired. Garnish top with reserved veggies and Canadian Bacon. Return to oven. Bake until eggs are thoroughly set, approximately 5 to 7 minutes. 

Remove from oven. Let stand several minutes before cutting into wedges. Serve and enjoy!
