Gluten-free, grain-free and carb-free cloud bread makes the perfect base for buffalo chicken sausage and blue cheese mayo.

This recipe is made with ​Jones Golden Brown® Chicken Patties.

ingredients
4 large eggs, separated
4 ounces cream cheese, room temperature
2 teaspoons lemon juice
1/8 teaspoon salt
1/3 cup mayonnaise
1/3 cup sour cream 
2 tablespoons crumbled bleu cheese or gorgonzola, plus more for garnish
1 teaspoon fresh garlic, finely chopped
1/2 teaspoon celery salt
Black pepper to taste
1 (5-7 oz) package Jones Dairy Farm All Natural Golden Brown® Breakfast Sausage Patties
2 tablespoons butter
2 teaspoons fresh garlic, chopped
2 tablespoons hot sauce
1 large stalk celery, thinly sliced 
DIRECTIONS
For homemade cloud bread, preheat oven to 325˚F. Combine egg whites, lemon juice and salt in mixer. Using whisk attachment, whip whites on high until peaks form, about 2 minutes. 

While egg whites are whipping, mix yolks with cream cheese in separate bowl. Gently fold yolk mixture into egg whites. On two greased cookie sheets, divide batter into 8 equal sized portions and shape into circles.  Bake until edges are lightly browned and tops are golden in color, about 20 to 25 minutes.

While cloud bread bakes, combine mayonnaise, sour cream, bleu cheese, finely chopped garlic, celery salt and black pepper in small bowl. Mix until smooth and creamy. 

In non-stick skillet over medium heat, brown patties in butter. Add chopped garlic and hot sauce; stir. Cook over medium-low heat until sauce reduces, turning patties so both sides are coated in sauce. 

Serve patties on cloud bread, lettuce leaf or bread of choice with dollop of bleu cheese mayo. Garnish with celery and several crumbles of bleu cheese.
