In this Mexican twist on a classic American breakfast, spicy scrambled eggs are layered with breakfast sausage patties, salsa and queso fresco.

This recipe is made with Jones Golden Brown® Turkey Patties.

Sandwich Turkey Patty 5 oz
ingredients
1 Jones Dairy Farm All Natural Golden Brown® Breakfast Sausage Patty
1 teaspoon olive oil
1 tablespoon jalapeno, seeded and finely diced
1 tablespoon red onion, finely diced
1 large egg, beaten
Salt and pepper, to taste
2 teaspoons of cilantro, chopped
Crumbled queso fresco, to taste
2 slices bread, any variety
Salsa, to taste
DIRECTIONS
Heat sausage patty according to package directions and keep warm.

In small non-stick skillet, heat olive oil over medium heat. Add jalapeño and red onion; cook until softened, about 3-5 minutes. Remove skillet from heat, turn heat to low and allow skillet to cool for a minute. Add egg and scramble, stirring frequently to create large, creamy curds—taking skillet on and off heat as necessary to avoid overcooking egg. When egg is just set, remove from heat and add salt, pepper, cilantro and queso fresco.

Top bread (toasted, if desired) with scrambled egg, sausage patty, salsa, additional queso fresco and cilantro.
