ingredients
7 oz. No Sugar, Antibiotic Free, All Natural Chicken Sausage, cut in 1/2 inch pieces
2 sweet potatoes, peeled and diced
2 tablespoons avocado oil, divided
1 cup red onion, diced, divided
1 teaspoon garlic, minced
2 teaspoon dried Mexican oregano
1 teaspoon chipotle powder
1 tablespoon fresh thyme, chopped
4 eggs
2 tablespoons fresh cilantro, chopped
1 avocado, sliced
1/2 teaspoon fresh black pepper, ground
DIRECTIONS
Microwave sweet potatoes until tender.
In a sauté pan over medium heat, add 1 tablespoon of avocado oil. Brown sausage and remove from the pan.
Add 1/2 cup of red onion and garlic to pan. Cook for 2 minutes and add sweet potatoes, oregano and chipotle powder. Cook sweet potatoes until brown, about 5 minutes.
Once sweet potatoes are brown, add sausage and thyme to the pan and cook for 1 to 2 minutes.
In another pan, add 1 tablespoon of avocado oil and fry the eggs.
To serve, place sausage and sweet potato mixture in bowl, place egg on top and sprinkle with cilantro, pepper, remaining onions and two slices of avocado.
