These pancake slider sandwiches are packed with protein and perfect for the on-the-go family. Add extra veggies for adults or maple syrup for the kids. 

This recipe is made with Jones Golden Brown® Turkey Patties.

ingredients

For Pancakes:

1 cup powdered pancake mix
1/2 cup milk
1 egg
1 teaspoon vanilla
1 teaspoon baking powder
2 tablespoons sugar
1 tablespoon vegetable oil

For Sandwich Filling:

8 Jones Dairy Farm Golden Brown Chicken or Turkey Sausage Patties 
4 eggs
Salt and pepper, to taste
1 tablespoon butter 
1/4 green pepper, diced small
1/2 roma tomato, diced small
8 slices desired sandwich cheese
Tomato, sliced
Avocado, pitted and sliced
DIRECTIONS
Mix all pancake ingredients in medium sized bowl. Heat griddle to medium heat and spray with nonstick cooking spray. Pour 2 tablespoons of batter per pancake onto heated griddle. When edges start to turn golden brown and bubbles are present in the pancakes, flip pancakes to other side. Cook for approximately one minute after flipping and remove from heat. Repeat until batter is gone. Set finished pancakes aside and keep warm.

While pancakes are cooking, heat Jones Dairy Farm Sausage Patties in skillet over medium heat for 6-8 minutes, turning occasionally. Set aside and keep warm.

In small bowl, beat eggs, salt and pepper. Heat skillet used for the sausages to medium heat. Melt butter and add tomatoes and peppers. Sauté vegetables for 1-2 minutes, stirring frequently. Reduce heat to medium-low and pour eggs on top of vegetables. Cook for approximately 5-7 minutes, carefully lifting edges and tipping skillet so uncooked egg on top moves to bottom. Cover skillet to help cook top of eggs. When eggs are cooked, remove from heat and cut into 8 pieces; use the top of a drinking glass or circular cookie cutter for rounded shape.

Assemble sliders using two pancakes, sausage patty, egg, slice of cheese, and additional tomato and avocado if desired. Serve warm with a side of maple syrup.

If desired, cheese may be added to the eggs in the skillet once cooked. Cover with foil and heat an additional 1-2 minutes on low to melt the cheese.
