Roasted chicken meatballs are paired with an aromatic herby dipping sauce makes for a great appetizer.  

This recipe is made with Antibiotic Free Chicken Meatballs.

NAE Chicken Meatball
ingredients
1 lb. (~16 meatballs) Jones Antibiotic Free Chicken Meatballs 
1/3 cup parsley
1/4 cup tarragon 
1/3 cup chives 
1/2 lemon, zested 
1/2 shallots, minced 
1 tablespoon pine nuts 
Pinch of red pepper flakes
1/2 cup olive oil 
1 tablespoon cold water 
Salt to taste 
DIRECTIONS
Bake the meatballs on a small sheet tray until golden brown. 

In a food processor or small blender, blend together the parsley, tarragon, chives, lemon zest, shallots, pine nuts, red pepper flakes, olive oil, and water. Blend until smooth. 

Add salt to taste and serve with the meatballs.
