1.3 oz. buttermilk pancakes

1 lbs., 9 oz.

scrambled eggs, precooked

Directions

  1. Preheat oven to 375°F.

  2. Cook sausage links in oven on sheet pan for 10-12 minutes.

  3. Cook scramble eggs in steamer for 20-25 minutes.

  4. Heat pancakes in a warmer or convection oven at 175°F for 5 minutes.

  5. Assemble pancake tacos: Place one sausage link and ½ oz. of scrambled eggs in each pancake. Serve 2 pancake tacos per student.

  6. Note: Suggest offering syrup as a condiment to drizzle on top of each taco.
