A Sage Decision: Why Jones Dairy Farm Switched Suppliers

Jones Dairy Farm recently made a significant change to one of its most important ingredients: sage. Over the past year, the company transitioned its sage supply to Kütaş, the world’s largest sage supplier. Since sage is used in nearly every sausage formulation Jones produces, the switch reflects the company’s long-standing commitment to quality ingredients, food safety, and flavor consistency.

What is Sage?

A staple herb in meat production, sage is a defining ingredient in American breakfast sausage, as well as a familiar flavor in stuffing and poultry recipes. Known for its warm, earthy, slightly peppery notes with hints of mint and eucalyptus, sage pairs well with black pepper, thyme, nutmeg, and garlic to create balanced, savory flavor profiles.

Why Put Sage in Sausage?

Sage enhances the richness of meat and helps create the unmistakable flavor that breakfast sausage is known for. In fact, it’s often considered the number one contributor to the overall flavor experience.

Where Does Sage Come From?

Originally from the Mediterranean, sage is now cultivated around the world. While both fresh and dried leaves are used in cooking, Jones Dairy Farm uses dried sage in its meat processing — primarily for flavor.

So Why the Change?

The decision to partner with Kütaş was driven by both quality and traceability. Based in Turkey and founded more than 40 years ago, Kütaş is recognized for producing premium herbs that are 100% traceable from field to finished product — an important safeguard for food safety and quality assurance.

Why Did the Transition Take a Year?

To ensure a seamless transition, Jones conducted extensive testing to confirm the new sage would perform consistently across every Jones all natural breakfast sausage variety —including pork, chicken, and turkey — each available in both links and patties. Blind taste tests and formulation adjustments were part of the careful, behind-the-scenes evaluation.

What Does This Mean for Customers?

While the transition was a major internal effort, customers won’t notice any difference. They can continue to expect the same signature flavor that has defined Jones breakfast sausage for generations.
