Grilled Cast Iron Skillet Bacon Hash

1/2 pound | Jones Dairy Farm Dry Aged Bacon, chopped |
2 tablespoons | olive oil |
1 | large russet potato, small dice |
1 | large sweet potato, small dice |
kosher salt and pepper, to taste | |
1 | small zucchini, cut in half lengthways |
1/2 | green bell pepper |
1/2 | red bell pepper |
1/2 | yellow bell pepper |
1/2 | red onion |
2-4 | large eggs |

Preheat grill to medium high heat. Add cast iron skillet to grill, shut the lid and heat for 10 minutes while prepping vegetables.

Once pan is heated, add bacon and cook until crispy.

Add olive oil to bacon in cast iron skillet. Next, potatoes, season with kosher salt and pepper and stir to combine.

While potatoes are cooking, add bell peppers, red onions and zucchini to grill to start getting soft and charred.

Once vegetables are soft and grilled, remove from grill and dice.

Once potatoes are soft, add grilled veggies and stir to combine.

Crack 2-4 eggs into skillet, cover grill and give eggs a few minutes to set up.

Season with more salt and pepper if desired.
