

Air Fryer Breakfast Taquitos

Crispy on the outside and packed with flavor, Air Fryer Breakfast Taquitos are a delicious way to start your day. Made with Jones Dairy Farm Chicken Sausage Links, eggs, and cheese, these easy, protein-packed taquitos are perfect for busy mornings!
Ingredients
- 1 (5 oz.) box Jones Dairy Farm Golden Brown All Natural Chicken Sausage Links, cooked and chopped
- 1 tablespoon olive oil
- 1/4 cup minced onion
- 1/2 teaspoon cumin
- 1/2 teaspoon chili powder
- 1/2 teaspoon sea salt
- black pepper to taste
- 4 eggs, whisked
- 12 corn tortillas
- 1 cup shredded white cheddar cheese
Directions
Brown the Jones Dairy Farm No Antibiotics Ever All Natural Chicken Sausage in a large skillet per package directions. Remove from the pan, slice and set aside.
In the same skillet, add the olive oil, onion and jalapeno. Saute over medium heat for 5-7 minutes or until soft. Add whisked eggs and scramble. Add reserved sausage, mix and set aside.
Trim approximately 1/4 of the width of the tortillas. Warm tortilla over medium low heat. Add a sprinkle of cheese and allow tortilla to soften, but not toast.
Remove tortilla from skillet, add filling mixture and roll up tightly. Repeat with remaining tortillas and filling.
Preheat air fryer to 360º F for about 5 minutes. Add the taquitos and air fry for 4-6 minutes, depending on desired crispiness.
Top the hot taquitos with pico de gallo or salsa, avocado or avocado crema, sour cream, and chopped lettuce.
