

Bacon, Banana, Peanut Butter & Jelly Bagel Sandwich
Sweet and Savory Breakfast Recipe
This Bacon, Banana, Peanut Butter & Jelly Bagel Sandwich is a sweet-and-savory twist on a classic, layered with creamy peanut butter, ripe bananas, jam, and crispy Jones Dry Aged Bacon. It’s a satisfying handheld breakfast or brunch that’s packed with flavor and crunch.
Ingredients
- 1 (12 oz.) package Jones Dairy Farm Dry Aged Cherrywood Smoked Extra Thick Bacon
- 4 bagels (or 8 mini bagels)
- ½ cup peanut butter
- ¼ cup jam of choice
- Optional for sprinkling on top of bagels: finishing salt or coarse salt, poppy seeds, sesame seeds, everything bagel seasoning
Directions
Place a metal baking rack on top of a foil lined baking sheet, and lay bacon on rack. If you don’t have the rack, simply place bacon directly on top of foil.
Place in a cold oven and turn oven to 350˚F.
Cook bacon until desired doneness, approximately 25-35 minutes, turning bacon slices over after 15 minutes.
While bacon is cooking, toast bagels in a toaster, or place on a second baking sheet and place in the oven for approximately 5 minutes.
Once bagels are toasted, spread each bagel half with 1 tablespoon peanut butter (1/2 tablespoon for mini bagel halves).
Place banana coins on top of the bottom half of each bagel.
Spread 1 tablespoon of jam on the top half of each bagel, on top of the peanut butter (use ½ tablespoon if using mini bagels).
When bacon is finished cooking, remove from oven and gently dab with a paper towel to remove excess grease. Cut bacon slices in half.
Using 4 half slices of bacon per bagel (2 slices per mini bagel), layer bacon on top of bottom half of bagel.
Your sandwich should be layered in the following order:
- Bottom half of bagel
- Peanut butter
- Banana coins
- Bacon half slices
- Jelly or jam
- Peanut butter
- Top half of bagel
If desired, brush tops of sandwiches with water, and finish by sprinkling coarse salt, poppy seeds, sesame seeds, or everything bagel seasoning on top.
