What Happens When Egg Salad and Bacon Share a Bagel
Creamy egg salad gets a serious upgrade in this bagel sandwich. Hard-boiled eggs are mashed with mayonnaise and yellow mustard into a rich, satisfying base, then piled high with crispy Jones Dairy Farm Dry Aged Bacon, fresh tomato slices, and peppery baby arugula. It comes together in 20 minutes, serves six, and works just as well for a weekend brunch spread as it does for a quick weekday breakfast. The kind of sandwich that makes people ask for the recipe.
Ingredients
- 18 hard boiled eggs, shells removed
- 1 cup mayonnaise
- 1 tablespoon yellow mustard
- 6 toasted bagels, any variety
- 12 pieces Jones Dairy Farm Dry Aged Bacon, fried crispy
- 12 slices tomatoes
- 6 small handfuls baby arugula
Directions
In large bowl add hard boiled eggs, mayonnaise, yellow mustard, kosher salt and black pepper. Use potato masher to mix until smooth. Add additional salt and pepper to taste.
Top each bagel with egg salad, 2 slices bacon, 2 slices tomatoes and small handful of baby arugula.
