18 | Hard Boiled Eggs, shells removed |
1 cup | Mayonnaise |
1 tablespoon | Yellow Mustard |
Kosher Salt and Pepper, to taste |

6 | Toasted Bagels, any variety |
12 pieces | Bacon, fried crispy |
12 slices | Tomatoes |
6 small handfuls | Baby Arugula |

In large bowl add hard boiled eggs, mayonnaise, yellow mustard, kosher salt and black pepper. Use potato masher to mix until smooth. Add additional salt and pepper to taste.

Top each bagel with egg salad, 2 slices bacon, 2 slices tomatoes and small handful of baby arugula.
