Warm bacon vinaigrette is the perfect way to jazz up a standard spinach salad. The subtly smokiness of the dressing pairs wonderfully with sweet pears.

This recipe is made with Jones Dry Aged Bacon.

8 oz Hickory Bacon
ingredients
8 slices Jones Dairy Farm Dry Aged Bacon
2 tablespoons onion, minced
2 teaspoons Dijon mustard
1 teaspoon brown sugar
1/2 cup red wine vinegar
Salt and pepper to taste
2 lbs spinach leaves, washed and roughly chopped
1/2 cup red onion, thinly sliced
1 pear, thinly sliced
DIRECTIONS
Cook bacon in large skillet until crisp. Remove bacon with a slotted spoon and reserve for topping salad.

Reserve 3 tablespoons of bacon fat in skillet, discarding remaining fat. Add onion to skillet and cook until translucent. Remove skillet from heat.

Whisk in mustard and brown sugar. Slowly whisk in red wine vinegar, then season to taste with salt and pepper.

In a large bowl, combine spinach, red onion and pear. Top with bacon vinaigrette and reserved bacon.
