Colorful veggies, smoky ham and savory breakfast sausage fill these grilled breakfast tacos. Top with salsa or hot sauce if you’re craving a little heat.

ingredients
4 Jones Dairy Farm All Natural Golden Brown® Pork Sausage Links
1 (7 oz. slice) Jones Dairy Farm Ham 
1/2 green bell pepper 
1/2 red bell pepper 
1/2 yellow bell pepper 
1/2 red onion
1/2 zucchini  
2 tablespoons olive oil
5 large eggs, scrambled
6 small corn tortillas 
1/3 cup cilantro, minced
1/3 cup cotija cheese 
Salsa for serving, optional
 
DIRECTIONS
Preheat grill to medium high heat and add the sausage, ham, bell peppers, onion and zucchini. Cook until sausage and ham are cooked and crisp and the vegetables are soft, about 10 minutes. Remove from grill and slice, set aside. 

Add 10-inch cast iron skillet to grill, close the cover and until hot. Once skillet is hot, add olive oil and eggs. Stir the eggs until fully scrambled and cooked, about 10 minutes. 

Add tortillas to grill to lightly toast and assemble tacos by adding eggs, vegetables, cilantro and cheese. Serve with salsa if desired.
