Heat oven to 350°F. Spray muffin pan with cooking spray. Place one slice of Canadian Bacon into each muffin cup, folding it slightly to fit.

Add eggs, cottage cheese, cheddar, salt and pepper to a blender; process until smooth.

Pour the egg mixture over the Canadian bacon until ¾ full. Sprinkle tops with chopped chives.

Bake until egg muffins are slightly firm to the touch in the center, 22-26 minutes.

Remove from oven and let cool for 5 minutes. The egg cups will puff while baking and settle down into the cups as they cool. Remove cups and let cool completely; store in an airtight container in the refrigerator for up to 5 days.
