Ingredients

1 package

Jones Dairy Farm Dry Aged Bacon, cooked and crumbled

3 cups

frozen tater tots

3/4 cup

mayo

1/2 cup

Greek yogurt

1 teaspoon

garlic powder

2 tablespoons

fresh chives, finely chopped

1/2 teaspoon

salt

1 teaspoon

black pepper

2 cups

spinach, roughly chopped

10 ounces

grape tomatoes, chopped

Directions

  1. Heat oven according to tater tot package directions. Cook for 10 minutes. Remove and smash using the flat side of a greased glass or a measuring cup. Season with salt and return to oven for 30 minutes or until crispy. Let cool 5 minutes.

  2. In large bowl, combine mayo, Greek yogurt, garlic powder, chives, salt and black pepper. Mix until well combined.

  3. Add crispy potatoes, crumbled bacon, spinach and tomatoes. mix until creamy and well combined.
