Grilled Ham Steaks with Tomato-Basil Vinaigrette

Ingredients

4 (7 oz. slices)

Jones Dairy Farm Boneless Ham

2 pounds

Assorted Vegetables (peppers, zucchini, asparagus, eggplant, onions, etc.)

1/4 cup

Olive Oil

1/2 tsp

Salt

1/4 tsp

Pepper

1 1/2 cups

Tomatoes, chopped and seeded (for vinaigrette)

1 cup

Fresh Basil, packed (for vinaigrette)

1/4 cup

Red Wine Vinegar (for vinaigrette)

2 tablespoons

Balsamic Vinegar (for vinaigrette)

1 tablespoon

Dijon Mustard (for vinaigrette)

3 cloves

Garlic, chopped (for vinaigrette)

1 1/3 cup

Olive Oil (for vinaigrette)

1 teaspoon

Honey (for vinaigrette)

Directions

  1. To prepare vinaigrette, place all ingredients in food processor or blender. Process until well blended. Season to taste with salt and pepper.

  2. Preheat grill to medium heat.

  3. Wash and cut assorted vegetables into grill-friendly sized pieces. Brush with olive oil and sprinkle with salt and pepper to taste.

  4. Grill vegetables for about 5 minutes until just tender, turning as needed. If using a grill basket, shake periodically to cook evenly. Remove veggies from grill and set aside on serving platter. Cover with foil to keep warm.

  5. Grill the ham slices for two minutes on each side over medium heat. Cover with foil while grilling to prevent steaks from drying out. Arrange ham slices and veggies on the serving tray and drizzle with vinaigrette.
