| 1 1/2 pounds | chicken breasts or thighs, cut in 1-inch chunks |
| 2 | bell peppers, cut in 1-inch squares |
| 1 | red onion, cut in 1-inch squares |
| 1 tablespoon | avocado oil |
| 1 (6 oz.) package | Jones Dairy Farm Hickory Smoked Canadian Bacon, cut in quarters |
| 1 can | pineapple or 1 1/2 cups fresh pineapple cut in chunks |

Stir coconut aminos, sea salt and ginger in a medium bowl. Add chicken and toss to coat; refrigerate for 1 hour or up to overnight.

Soak wooden skewers in water for 1 hour. Heat grill to 400º F.

Toss peppers and onions with avocado oil and salt and pepper. On skewers, alternate threading marinated chicken, Canadian Bacon, pineapple, onions and peppers.

Grill skewers about 6 minutes per side, or until chicken is cooked through.
